There are fancy dinners, and then there’s Cottage Pie. Fancy dinners make you use words like “reduction” and “deconstructed.” Cottage Pie simply says, “Sit down, grab a fork and prepare to be happy.”
This Crispy-Topped Cottage Pie is the culinary equivalent of putting on your favourite trackpants after a long day. It’s hearty, comforting and loaded with rich savoury goodness. Beneath that gloriously golden potato topping lurks a flavour-packed beef filling so satisfying it could probably solve minor family disputes.
The magic happens when creamy mashed potato meets the oven and transforms into a crunchy, golden crown. That first crack of crispy potato as your spoon breaks through is one of life’s great pleasures, right up there with finding money in your pocket or discovering someone else has done the washing up.
Perfect for chilly evenings, hungry families or anyone who believes comfort food should be measured by how many happy noises it creates at the dinner table, this Cottage Pie is guaranteed to become a household favourite.
Ingredients
Filling
- 1 tbsp olive oil
- 1 brown onion, finely chopped
- 2 carrots, diced
- 500g beef mince
- 2 tbsp tomato paste
- 250ml beef stock
- 1 tbsp Worcestershire sauce
- 1 cup frozen peas
- Salt and pepper to taste
Potato Topping
- 1kg potatoes, peeled and chopped
- 50g butter
- 125ml milk
- 100g grated cheddar cheese
- Salt and pepper to season
Method
- Preheat oven to 200°C.
- Boil potatoes until tender. Drain and mash with butter and milk until smooth. Season generously.
- Meanwhile, heat olive oil in a large frying pan. Cook onion and carrot until softened.
- Add beef mince and cook until browned, breaking up any lumps. Nobody likes giant surprise meat boulders.
- Stir through tomato paste, stock and Worcestershire sauce. Simmer for 10 minutes until thickened.
- Add peas and season with salt and pepper.
- Spoon the beef mixture into a baking dish.
- Spread mashed potato over the filling, creating decorative peaks with a fork. These little mountains become crispy treasures later.
- Sprinkle cheese over the top.
- Bake for 25–30 minutes until golden, crispy and capable of causing neighbours to suddenly “drop by.”
Tips For Success
- Rough up the potato surface with a fork for maximum crunch.
- Use freshly grated cheese for better melting.
- Let the pie rest for 10 minutes before serving.
- A splash of red wine in the filling adds extra depth.
Leftovers
Leftover Cottage Pie stores beautifully in the refrigerator for up to 3 days and reheats wonderfully. Some experts even claim it tastes better the next day. By “experts,” we mean people standing in front of the fridge at midnight eating it straight from the container while pretending nobody can see them.
